- Cheddar: Slightly Sour and Salty. Cheddar adds in a hint of farmyard and both grass and hay, Pair with Coastal Highland like Oban 14yo, Clynelish 14yo.
- Roquefort: The cheese is white, tangy, crumbly and slightly moist, with distinctive veins of blue mold. Pairs well with peated scotch or whiskey particularly with peaty Islay whiskies such as Laphroaig, Caol Ila.
- Brie/Havarti: Creamy, nutty, grassy, and mushroom-like. Pair with Sweeter scotches like Glenmorangie
